The creation of A Simple Cake

A Simple Cake was created in 2009 by the talented Gail Watson.   After 21 years in the custom cake industry with her company Gail Watson Custom Cakes, which she started in 1988, she realized there was a new need in the wedding cake field, a cake that would be between the high end custom cakes and the sheet cakes from your local bakery, thus creating A Simple Cake.   Gail’s experience landed her in every bridal magazine, on many movie sets, in some of the most beautiful books and on some incredible TV shows, but none of that was more important as working with the individual couple and creating another perfect aspect of their most important day.  We have always tried to pay very close attention to what our clients' needs and wishes are. A Simple Cake was created out of just that. More and more often, as much as the gloriously decorated cakes with a garden of hand molded sugar flowers on them were desired, budget and style concepts lead so many brides to say they wanted a delicious cake and a "simple cake", not plain, not without style or quality, but simple elegance.

The website was also designed to make ordering your cake easy and stress free. Our desire is to make this process as smooth and sweet as our icing so you can have more time to focus on some of your other planning details.

With Gail retiring in 2012, Lauren Bohl White of A White Cake took over the company after joining the business in 2010.  Lauren built upon what Gail created and generated a loyal following, not only with clients but with industry professionals as well.

At the end of 2017 Lauren started a new journey taking her from Santa Barbara to Pittsburgh entrusting Nicolle Lugo, a fellow ICE alumni and friend with A Simple Cake.

Like Lauren, Nicolle started her journey in cake designing by interning with Ruth Drennan of Ruth Drennan Cakes, and being mentored by both Ruth and Gail Watson.  Nicolle founded her own custom cake business, Cakes by Nicolle, in 2010 and now owns and operates A Simple Cake.  The whisk has been passed onto her to continue the legacy of these fine women.
